Healthy homemade snacks your kids will love
I love this time of the year, outdoor living and healthy fresh produce to choose from. I can hardly wait for the first apricots and peaches to ripen. My absolute favourite is fresh tomato, I know you can get tomatoes all year round but I buy local produce and I am not keen on greenhouse grown vegetables so I rarely have fresh tomatoes in winter.
Our favourite afternoon snack at the moment is fresh tomato bruschetta. Nutritious and delicious, it beats any ready made snacks and is easy to make.
All you need is some nice bread sliced (preferably Italian bread), fresh chopped tomatoes, olive oil and basil or oregano.
Dress the chopped tomatoes with a little extra virgin olive oil, a pinch of salt (optional) and the finely chopped basil; put it on the lightly toasted bread and your snack is ready. You can adapt the recipe to your taste by adding other ingredients to the tomatoes such as chopped olives or capers. I sometime use oregano instead of basil, kids associate the taste of oregano with pizza so they tend to enjoy it more than basil.

Wow! That sounds so delicious. They must love the bruschetta.

Good tips. One can give fresh fruits and vegetables, whole grain crackers, cheese cubes, peanut butter-cheese sandwiches into daily snacks. Also can try can try a yoghurt shake with fruit of choice. Try to avoid pre-packaged snacks because its unhealthy. One can go for milk-based drinks because it rich in proteins, calcium, iron, also fruit juice will be good. One can even go for some innovative ideas like Ice cream cone can be filled with cheese, veggie and tomato chopped or a tuna fish salad which a great snack, involve the child in building their own meals from sandwiches, cheese cubes, and dried fruit or serve the meal in innovative plates and cups.
