Recipe of the week: pasta with fresh tomato, tuna, capers and olives

Today I would like to share one of my favourite nutritious dishes with you. Another Mediterranean winner, this delicious pasta is easy to prepare and is certain to be a success with the kids and the grown ups too.

 

Ingredients for 4 people

400 grams of chopped tomatoes

180 grams of tuna (either in olive oil or brine)

10 halved green olives

Capers

400 grams of pasta (choose the shape you prefer)

2 garlic cloves, pealed and squashed

25 grams of finely chopped celery

Olive oil, basil and parsley

 

Heat the garlic in extra virgin olive oil, before the garlic turns golden add the celery and sweat it until soft. Add the tomato and salt to taste and let it cook for 10/15 minutes, then add the tuna flakes, a touch of water, the basil, parsley, capers and olives. Bring to the boil and cook for another 5 minutes. Boil the pasta in salty water, drain and mix the sauce in. The pasta is ready to serve. Enjoy…
